amazing recipe

We just made these fabulous enchiladas for Sara's 25th birthday on Friday! They were a hit. Yum!! So good. Thanks for the recipe mom!!

GREEN CHILI CHICKEN ENCHILADAS

4 Chicken Breasts
2 T Olive Oil
1 Large White Onion
2 Cans Green Chilis
1 Jalapeno, Diced
2 Cloves Garlic, Minced
2 T Cumin2 Large Cans Green Enchilada Sauce
1 Bunch Cilantro, Chopped
14-16 Corn Tortillas
1-2 Cups Pepper Jack Cheese, Shredded
Sour Cream

- Boil chicken breast in water until cooked through. Strain and shred or dice chicken in to small pieces. You’ll need to 2 large rectangular glass or ceramic baking dishes. Coat the bottom of both pans with a thin layer of enchilada sauce.
- For filling: In a large sauté pan, heat olive oil. Add onion and sauté for 4-5 minutes. Add green chilis, jalapeno, garlic, and cumin and sauté for another 2 minutes. Add chicken and 12-16oz of enchilada sauce – you want the filling to be moist. Add cilantro and season with salt and pepper to taste. Remove from heat.
- Preheat oven to 375°
- In a small pan over medium heat, add a thin layer of enchilada sauce. Adding 1 tortilla at a time, soak tortilla on one side for about 30-45 seconds and then flip with a fork. You want to get the tortilla soft enough to roll, but not too soft that it falls apart. It might take some trial and error to get it just right.
- Once tortilla is softened in sauce, transfer to a flat area and spoon in about 3 heaping tablespoons of filling (you can add as much or as little as you want). Repeat, placing each rolled tortilla with filling close to each other in baking dish.
- Once all rolled enchiladas are in the pans, pour enough of the remaining enchilada sauce over the enchiladas to cover completely. Do not add too much sauce, as they will get too mushy while baking. Sprinkle with as much cheese as desired.
- Bake for 30-35 minutes until cheese is bubbly and a little crispy.
- Serve hot and add a dollop of sour cream to the top.

Oh, and please serve with my famous margaritas! Here is the recipe for those:

LoLo's Margs:

1 bottle Simply Limeade
2 bags fresh squeezed lime
add as much tequila as you want

** for a fun twist, add some mango or pomegranate juice
